Stay Woke With These Coffee Muffins

If coffee is your pick-me-up, then these coffee muffins are for you! Pair a coffee muffin with a real cuppa coffee, tea or milk – whatever your preference!

You can have these scrumptious muffins in a matter of 35 minutes!

Coffee Muffins Ingredients

Coffee Flavoured Muffins

  • 240g flour
  • 2tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 1tsp ground cinnamon
  • 2tbsp coffee of choice
  • 125ml low fat milk
  • 50g plain yoghurt
  • 2 large eggs
  • 1tsp vanilla extract
  • 3tbsp maple syrup
  • 2tbsp melted coconut oil
  • 40g chocolate chips/ toasted walnut bits

Crumb

  • 50g flour
  • 2tbsp light brown sugar
  • 1 tsp ground cinnamon
  • 1tbsp coconut oil

Sauce

  • 1tbsp coffee
  • 3tbsp maple syrup
  • 150g plain yoghurt

Method

  1. Preheat oven to 180°C.
  2. Making the crumb – Mix the flour, sugar and cinnamon in a small bowl and mix to combine. Add coconut oil and mix until combined. Set aside.
  3. Making the muffins – Combine the flour, baking powder, bicarb, cinnamon and coffee – mix well in a bowl.
  4. Whisk the milk, yoghurt, eggs, vanilla, maple syrup and coconut oil together. Whisk until combined.
  5. Add the whisked ingredients to the dry ingredients (flour, baking powder, bicarb and cinnamon).
  6. Line the muffin tray with Spray ‘n Cook.
  7. Spoon the mix into the muffin tray. Sprinkle the crumb mix to the top of the battered muffins.
  8. Bake for 12-15 minutes – make sure a skewer comes out clean if you poke through it.
  9. While that bakes, make the sauce! Boil some water and dissolve the coffee in 2 tbsp of boiling water. Stir in the maple syrup. Let it cool. Once cool add to the yoghurt and mix well. If it’s too thick add some cold water until you reach your desired consistency.
  10. Let the muffins cool for a few minutes in the tin and then remove from tin and place on wire rack.
  11. Serve with a drizzle of coffee sauce.
